Broc-Caul Salad

A nice salad to serve in the summer time.

Broc-Caul Salad
1 bunch fresh broccoli, broken in flowerets
1 bunch fresh cauliflour, broken in flowerets
1/2 cup chopped red onion
1 lb bacon, cooked & crumbled
1/2 cup hulled sunflower seeds
1/2 cup raisins
Combine all ingredients in a bowl
Dressing:
3/4 cup mayonnaise
1/4 cup sugar
2 tbs vinegar
Mix the ingredients and pour over salad. Mix well. Serve chilled.

Chicken Tetrazzini

I really like this recipe.  Sometimes I add a can of Rotel, thus making it Chicken Spaghetti.

Chicken Tetrazzini
1 (10 oz) can cream of mushroom soup
1 (10 oz) can cream of chicken soup
1 cup milk
4 cups cooked, shredded chicken
1 (12 oz) pkg spaghetti, cooked
1 (16 oz) pkg shredded cheddar cheese
1 (4 oz) can chopped pimento, drained
1 (5 oz) pkg grated parmesan cheese
Preheat oven to 350. Mix all ingredients, except parmesan cheese. Transfer to sprayed 9x13-inch baking dish. Top with lots of parmesan cheese. Bake uncovered for 20-30 minutes.

Dawn's Meatloaf

Here's my meatloaf recipe.  Sometimes I add a few different spices though, just depends on my mood.

Dawn's Meatloaf
2 pounds ground beef
1 pkg onion soup mix
1/2 sleeve of saltine crackers, crushed finely
garlic salt to taste
1/4 teaspoon ground black pepper
1/4 cup Ketchup
1 egg
dash of ground sage
dash of Worcestershire sauce
1 cup Ketchup (or more if you like it as I do!!!)
Preheat oven to 350 degrees F. In a large bowl, combine the beef, onion soup mix, crushed crackers, garlic salt, ground black pepper, Worcestersire sauce, Ketchup, egg and sage and mix well. Transfer to an ungreased 9x13 inch baking dish. Form into a loaf . Bake at 350F for 1 hour, or until center is completely cooked. Spread cup of Ketchup on top and bake and additional 15-20 minutes.

Banana Nut Bread with Yellow Cake Mix

We love banana bread and this seriously is the easiest recipe that I have ever found to make it.

Banana Nut Bread with Yellow Cake Mix
1 (18.25 ounce) box yellow cake mix
3 eggs
1/3 cup oil or applesauce
3 to 5 ripe mashed bananas
1 cup chopped pecans or walnuts
Heat oven to 350 degrees F.  Mix mashed bananas with eggs, oil or applesauce if using cake mix and nuts.  Pour into 2 greased and floured loaf pans or a Bundt pan and bake for approximately 30 to 35 minutes, depending on your oven. Remove from oven and let cool 10 minutes, then remove to a wire rack to cool completely.  NOTE: Bundt pan, bake approximately 45 minutes.

Tomato Gravy

One of our favorite breakfast is biscuits with tomato gravy and bacon.  This is how I make my tomato gravy.

Tomato Gravy
4 Tbsp. oil
2 or 3 Tbsp. flour
Salt and pepper
1 (15-oz.) can diced tomatoes, drained
1 cup water
1 (8-oz.) can tomato sauce
Heat oil in a large skillet over medium heat; stir in flour. Cook and stir until light brown. Season to taste with salt and pepper. Pour in diced tomatoes and 1 cup water; stir well. Reduce heat. Pour in tomato sauce; stir. Cover and simmer 15 minutes or until thick. Serve over hot biscuits.

Easy Baked Ziti

I love Italian food and this hits the spot!!!

Easy Baked Ziti
1 pkg.  (16 oz.) ziti pasta
1 jar  (26 oz.) spaghetti sauce
1 container  (15 oz.) ricotta cheese
1 pkg.  (8 oz.) shredded mozzarella cheese, divided
1/4 cup  parmesan cheese
PREHEAT oven to 350°F. Cook pasta as directed on package. Drain pasta, reserving 1/2 cup of the pasta cooking water.  MIX spaghetti sauce, ricotta cheese and reserved 1/2 cup pasta cooking water in large bowl. Add pasta and 1/2 cup of the mozzarella cheese; mix lightly. Spoon into 13x9-inch baking dish sprayed with cooking spray; sprinkle with remaining mozzarella cheese and the Parmesan cheese. Cover.  BAKE 30 min.; uncover. Bake an additional 10 min. or until heated through.

Cheesy Baked Chicken and Rice

This dish is one of those that you can throw together real quick on a weeknight and fill everyone up.

Cheesy Baked Chicken and Rice 
1 can cream of chicken soup
1 cup water (or milk!)
1 Box Rice-a-Roni Cheesy Rice
1/8 tsp seasoning salt (or whatever chicken-type seasoning you like)
4 boneless chicken breasts, or 8 chicken tenderloins
Preheat the oven to 375 degrees. Stir the soup, water/milk, and rice (with the seasoning packet in the box also) in a 2-quart shallow baking dish. Top with the chicken. Sprinkle the chicken with the seasoning salt. Cover the baking dish. Bake for 1 hour or until the chicken is cooked through. Check on it about halfway through, I had to stir my rice once to keep it from sticking. Enjoy!

Cherry Cheesecake Fluff Salad

I've made this dessert on several occasions and it's always a hit.

Cherry Cheesecake Fluff Salad
21 ounce canned cherry pie filling
1/2 of a 3.45 ounce instant pudding mix, cheesecake flavor
16 ounces Cool Whip
10 ounces miniature marshmallows
In a large bowl, mix the cherry pie filling and the instant pudding mix (remember, only half the package) until the pudding mix is dissolved. Fold in the cool whip.  Mix in the miniature marshmallows until marshmallows are completely coated.  Cover and chill for about an hour before serving.

Cracker Barrel Hash Brown Casserole

Every time I go to Cracker Barrel, I have to order these potatoes.  This is a pretty close copy-cat recipe.

Cracker Barrel Hash Brown Casserole
2 lbs frozen southern style hash brown potatoes
2 cups sour cream
1 10 1/2 ounce can cream of chicken soup
1/2 cup butter or margarine
1/2 cup chopped onions
2 cups grated cheddar cheese
salt & pepper
Place potatoes in greased 9 x 13-inch pan.  Season with salt and pepper.  In bowl, combine onions, sour cream, and cream of chicken soup.  Pour soup mixture over potatoes.  Sprinkle with cheddar cheese and melted butter.  Bake in 350°F oven for 45 minutes or until cheese is melted.

Forgotten Jambalaya

Love anything Cajun (or in our case, Creole)!!!  Here's my recipe for super easy crock-pot Jambalaya.

Forgotten Jambalaya
1 lbs boneless chicken breasts or boneless thighs
1 lbs smoked sausage, cut to ¼-inch rounds
1 10-oz can Rotel tomatoes with chiles, undrained
1 14-oz can chicken stock
1 6-oz can tomato paste
1 onion, diced
1 green bell pepper, diced
3 celery ribs, chopped
5 garlic cloves
3 tsp parsley flakes
1 1/2 tsp dried oregano
1 1/2 tsp salt
1/2 tsp cayenne pepper
1/2 tsp hot sauce
1 cup instant rice, uncooked *
1 lbs shrimp (optional)
green onion for garnish
Place the chicken in the bottom of the crock pot along with the sausage.  Combine the tomatoes, broth, tomato paste and the seasonings in a small mixing bowl.  Add diced vegetables to the crock pot then top with the tomato mixture.  Set your cook time. I cooked mine for 8 hours using frozen boneless chicken breasts.  You can use thawed chicken breasts/thighs and cook for 4-6 hours on “high.”  Once the crock pot has finished, use forks and shred the chicken in the pot.  Adjust the flavoring and add the hot sauce.   Cook one cup of white rice separately.  When the cooking time is done, fold the cooked rice into the crock pot. After the rice is added, with 30-minutes of cooking time remaining, this is the point you would add thawed shrimp to the crock pot.

Corn Casserole

Spoon Bread...do I have to say anything else?

Corn Casserole
1 (8 ounce) container sour cream
1/2 cup unsalted butter, softened
1 (15 ounce) can creamed corn
1 (15 ounce) can whole kernel corn
1 (8.5 ounce) package corn bread mix
Preheat oven to 350 degrees F (175 degrees C). In a mixing bowl, stir together the sour cream, butter, creamed corn, corn nibblets and corn muffin mix. Pour into a 1 quart casserole dish and bake for 40 minutes.

Red Beans & Rice

Everybody should know how to cook red beans & rice!!!  Here's my recipe...

Red Beans & Rice
2 lb. Camellia Red Kidneys
1lb smoked sausage, sliced
8-10 cups water, or enough to cover beans completely and 2 inches above
1 onion, chopped
1 toe garlic, chopped
2 Tbs. oregano
Salt to taste
Red Pepper to taste
Rinse and sort beans. Place in 5-6qt crock-pot. Cover with water and soak overnight. In the morning, turn crock-pot on low. Add chopped onion, garlic, salt, oregano, red pepper and sliced smoked sausage plus enough water to cover beans completely and 2 inches above. Cook on low for 9-10 hrs. Serve over hot cooked rice.

Poppy Seed Chicken

A friend of mine's mother made this for us one night for supper.  She was nice enough to give me the recipe.  One of Daniel's faves!!!

Poppy Seed Chicken
1 stick margarine
1 pkg Ritz crackers
2 cans cream of chicken soup
1 (80z) sour cream
2 tbs poppy seeds
4 chicken breast
Cook chicken; debone and cut or tear into small pieces. Mix butter with crackers. Put 1/2 of the cracker mix in bottom of casserole dish. Mix other ingredients; put over cracker mix. Place the remaining cracker mix on top of casserole. Bake at 325 degrees for 30 minutes. Serve over rice, mashed potatoes, or wide egg noodles.

John Wayne Casserole

Use to have this at the college we use to work at.  It is very tasty!!!

John Wayne Casserole
2 lbs Ground Beef
2 cups Sour cream
1 cup Mayonnaise
1 cup Diced onions
1 pkg Biscuiit mix (small pack of Bisquick)
4 each Fresh tomatoes
½ cup Diced green peppers
2 pkgs Taco seasoning
½ cup Jalapeno peppers
3 cups Shredded cheddar cheese
Brown ground beef and drain fat. Mix in taco seasoning. In separate bowl mix sour cream, mayonnaise, ½ of the cheddar cheese and chopped onion. Mix the biscuit mix following package directions. Lightly grease a casserole dish and press biscuit dough in the bottom of the dish to ½ inch depth. Layer ground beef, sliced tomatoes, chopped bell pepper and diced jalapenos. Spread mayonnaise mixture on top. Finish off with the remaining shredded cheese. Bake at 350 degrees for 25-35 minutes until the crust is light brown.

Copycat Pancho's Dressing

Use to get this dressing on the taco salads at a local Mexican joint in my home town.  Found a copy cat recipe and it is the bomb!!!

Copycat Pancho's Dressing
1/2 cup prepared mustard
1/2 cup sugar
1/2 salad oil
1/3 cup white vinegar
1 teaspoon oregano
4 green onions, chopped
Place all ingredients in a blender (or use emmersion hand blender) and liquefy.
(All you Grenada folks, remember the house dressing at Pancho's, this taste just like that stuff!!! You can still get it at the Pancho's Restaurant in West Memphis!!!)

Green Chili Stew

Simple, easy stew that will fill you up and taste mighty good with the addition of green chilies!!!

Green Chili Stew
1 pound ground beef
1 small onion, chopped
1 clove garlic, chopped
1 (4 ounce) can green chiles
2 (14.5 ounce) cans whole peeled tomatoes, chopped
2 (8 ounce) cans tomato sauce
1 (15 ounce) can whole kernel corn
3 potatoes, peeled and cut into chunks
2 cups water
ground cayenne pepper to taste
salt and pepper to taste
Place the ground beef, onion, and garlic in a deep skillet or saucepan over medium heat. Cook and stir until beef is evenly browned and onion is tender. Drain grease. Mix in green chiles. Stir in the tomatoes, tomato sauce, corn, and potatoes. Pour in water. Bring to a boil, reduce heat to low, and simmer 15 minutes, or until potatoes are tender. Season with cayenne pepper, salt, and pepper.

Hamburger Stroganoff

This is so much better than Hamburger Helper!!!

Hamburger Stroganoff
1 (16 ounce) package egg noodles
1 pound lean ground beef
1 (.75 ounce) packet dry brown gravy mix
1 (8 ounce) package cream cheese
1 (6 ounce) can chopped mushrooms, with liquid
1/2 cup milk
1 (8 ounce) container sour cream
2 (10.75 ounce) cans condensed cream of mushroom soup
Bring a large pot of lightly salted water to a boil. Add egg noodles and cook for 8 to 10 minutes or until al dente; drain. In a skillet over medium heat, brown the ground beef until no pink shows; drain. Mix brown gravy, cream cheese and mushrooms with hamburger until cream cheese has given the mixture a whitish look. Add milk, sour cream, and mushroom soup to cooked pasta. Blend hamburger mixture with pasta.

Artichoke Dip

This dip is what made me discover my love of artichokes!!!

Artichoke Dip
14 oz can or jar of artichoke hearts, chopped fine
1 cup parmesan cheese
1 cup mayonnaise
red pepper & garlic powder to taste
Combine chopped artichokes with remaining ingredients. Place in 8x8 baking dish and bake at 375 for 15=20 minutes. Serve with Triscuits or Wheat Thins.

Dawn's Homemade Vegetable Beef (Deer) Soup

My son would eat this everyday!!!  I love to make soup with whatever I have on hand, but this is the basic recipe that I use.

Dawn's Homemade Vegetable Beef (Deer) Soup
2lbs stew meat (beef roast cut into small pieces or deer roast cut into small pieces)
2lbs frozen mixed vegetables
8 medium potatoes, peeled and diced
2 medium onions, chopped
1 (46oz) can Vegetable Juice
1 (28oz) can Diced Tomatoes
1 can Rotel 
salt & pepper to taste
In a large stock pot (at least, 8 quarts), place all ingredients. Add enough water to almost fill stock pot. Bring to a boil. Reduce heat to medium low. Allow soup to simmer for 1 1/2hrs-2hrs. Serve with crackers or a pone of cornbread!!!

Deer Poppers

We love deer meat at my house.  Here's a recipe that we like to use up some of the loin.

Deer Poppers
1/2 lbs deer meat - back strap
Dale's seasoning
12 slices bacon
1/4 cup cream cheese
12 slices pickled jalapenos
Cut back strap into about 12 strips, lengthwise In fridge, marinate deer meat in Dale's seasoning for at least 1 hour After meat has marinated, remove from juice and pat dry Lay a strip of meat on top of a strip of bacon. Put a teaspoon of cream cheese at one end, and top with a slice of jalapeno. Roll up and secure with a skewer. Repeat with remaining ingredients. Grill on both sides until bacon is crisp - about 10 minutes

Cheese Ball

I love cheese balls!!!!  Here is a recipe for the one I make the most.

Cheese Ball
1 (8 ounce) package cream cheese
1 (2.5 ounce) package smoked sliced beef, chopped
3 green onions, finely chopped
1 dash hot pepper sauce
pinch of garlic salt
Combine cream cheese, beef, onions, garlic salt and pepper sauce with hands or an electric mixer. Shape into a ball. Chill at least 1 hour before serving with crackers.

Cream Cheese Rotel Dip

Here's a favorite dip to have with either tortilla chips or corn chips.

Cream Cheese Rotel Dip
2 (8 ounce) packages cream cheese 
1 (10 ounce) cans Rotel tomatoes & chilies 
2 (15 ounce) cans Corn, drained well (optional)
1 lb sausage or ground beef
Brown sausage or ground beef in large frying pan, drain and return to pan. Add well drained hominy. Add 2 packages of cream cheese to the meat. Drain about half of the liquid off the rotel tomatoes (actually pouring the rotels into a strainer will drain off too much of the liquid, just drain with lid on can). Add the rotel tomatoes to the cream cheese and meat and melt all ingredients together until well blended. Can be served in a crock pot to stay hot.

Orange Juice Cake

One of my favorite cakes that Mama use to make.  She always made this at least once a year for some holiday.

Orange Juice Cake
Cake:
1 pkg. yellow cake mix
3 eggs
3/4 cup orange juice
3/4 cup wesson oil
Mix together and put in greased bundt pan and bake as on mix. when done let set 5 to 10 minutes. 
Glaze:
1 cup orange juice
1/4 cups regular sugar
1 cup powdered sugar
Mix orange juice, regular sugar, and powdered sugar together. Drizzle over cake.

Pink Fluff

One of my husband's favorite sides at Thanksgiving and Christmas!!!

Pink Fluff
1 large pkg. strawberry or cherry Jell-O gelatin dessert 
12 ounces cottage cheese 
9 ounces Cool Whip 
8 ounces crushed pineapple, drained 
1/2 cup chopped nuts 
Stir dry Jell-O into cottage cheese. Fold in Cool Whip. Mix in pineapple and nuts. Chill before serving. 

Mama's Banana Pudding

The best...hands down!!!

Mama's Banana Pudding
5 ripe bananas
1 lb vanilla wafers
1/4 cup flour
1 cup sugar
2 cups milk
3 eggs
1 tsp vanilla
Layer banana slices and cookies in deep sided baking dish. Mix all other ingredients in a boiler. Cook over low heat until thickened. Pour mixture over bananas and cookies. Using a knife, place slits in bananas and cookies so that pudding mixture can seep down.

Mama's Chocolate Pie

Can't beat Mama's chocolate pie!!!  Yummy!!! 

Mama's Chocolate Pie
1 1/2 cups sugar
1/2 cup flour
1/4 cup cocoa
dash of salt
2tbsp butter
4 eggs, seperated
2 1/4 cups milk
1tsp vanilla
Mix sugar, flour, cocoa and salt. Add slightly beaten egg yolks and 1/4 cup milk. Mix thoroughly. Add remaining milk, butter and vanilla. Cook over medium heat in a heavy saucepan, stirring continuously until thick. Pour into baked 9 5/8in pie shell. Add meringue and bake at 350 until slightly brown. 

Buffalo Chicken Wing Dip

One of my favorite snacks to make is this dip.  I love hot wings and this gives me that flavor along with my favorite snack of chips & dip.

Buffalo Chicken Wing Dip
2 (8 ounce) packages cream cheese, softened
3/4 cup pepper sauce (such as Crystals)
1 cup Ranch salad dressing
2 cups diced cooked chicken
Preheat the oven to 350 degrees F (175 degrees C). In a medium bowl, stir together the cream cheese and hot pepper sauce until well blended. Mix in the Ranch dressing and chicken. Place mixture in 8x8 baking dish. Bake for 30 minutes in the preheated oven. Serve with chips, crackers, or celery sticks.

Chicken Gumbo

My Mama's recipe for Chicken Gumbo!!!  Best I've ever had...only better when she'd make it with duck!!!! YUMMY!!!

Chicken Gumbo
1 whole chicken or 6-8 bone-in breast, boiled and deboned, keep broth
1 1/2 sticks butter
1 cup flour
3-4 onions, chopped
1 small bunch celery, chopped
1 bunch of green onions, chopped
1 large bell pepper, chopped
3-4 cloves minced garlic
1 6oz tomato paste
2 14oz cans diced tomatoes
2 tsp accent
2 tbs parsley
1 tsp oregano
1 tsp tyme
2 tbs salt
1 tbs black pepper
1 tsp red pepper
2 tbs gumbo file
Make roux by browning flour in butter until the color of milk chocolate. Add to broth. Saute vegetables until soft. Add sauted vegetables and chicken to broth. Add seasonings. Simmer on low for 2 hours, stirring often. Serve over rice.
